What I Eat in a Day

Today, I'd like to share with you guys what I eat in a typical day. I'll admit, I thought about writing this post about two weeks ago and when I did, I thought a lot about what I actually eat. There was a temptation to fudge the post and say I eat a lot healthier than I do but I want to put my real self forward:

  • Breakfast: This is so bad for me and it contradicts an advice I gave on having productive days but I'm really just not hungry in the morning! I have been trying to get better at eating at least something, if not a hearty meal so I've been buying a lot of fruit. Most mornings I'll grab a banana to eat with the free coffee I get at work. I'll eat it in my office while planning out the rest of my day. 
  • Lunch: This is when I have a bigger meal because around noon, my stomach demands to be taken care of! I work very close to where I live - it's about a 10-15 minute walk! I like to take advantage of this so most days I go home for lunch and reheat my leftover dinner from the night before in the oven or a stove (something I can't do at work). This week, I had quite a lot of leftovers from a lemon garlic chicken dish I made Tuesday night so I've been eating that for lunch. Some days when I'm really craving it, I'll go to a food truck though. They have tons of delicious food trucks near where I work, including a pho truck or a dumpling truck that I definitely go out of my way to get.
  • Dinner: For dinner, I like to cook a good meal - usually one that involves vegetables. Last night, I made a turkey meatball dish (that I'll have the recipe for here on the blog soon enough) with a side of salad. The thing is, I usually eat so much at lunch that I don't really eat too much for dinner which is why I have so much leftover for lunch the next day. 
Upon reflection, I realize I probably could be doing more to eat healthier and I could definitely eat more for breakfast. It's definitely something I need to work on but I also live a pretty active lifestyle and go running and exercising regularly so hopefully things will balance out for me in the long run.

  1. Dear Deborah, I think you shouldn't be too strict to yourself as I think you eat already healthy enough with the mostly homemade food you consume. And not everybody likes a breakfast :)

  2. This is a great idea! It kinda forces you to reflect on what you actually eat. I'm also so bad at eating breakfast :/ When you're in a hurry in the morning it just slips my mind! Also that lemon garlic chicken looks sooo good!

  3. I find it hard to eat breakfast most days. It's just like my stomach isn't ready for food early in the morning! LOL. Coffee, on the other hand, I'm always ready for.
